Thaw your Rocky River Farms steak completely in the refrigerator.
2. Remove vacuum seal packaging.
3. Pat dry with a paper towel.
4. Cover both sides of the steak with Kosher course salt. The steak should be white.
5. Cover both sides of the steak with a small amount of brown sugar.
6. Place the steak back into the refrigerator for two hours.
7. Remove the steak from the refrigerator and wash it under cool water to remove all of the salt
and brown sugar pat dry with paper towel.
8. Let steak sit until it is room temperature. ( about 30 min )
9. Preheat your oven to 350 degrees.
10. Heat a skillet (prefer cast iron) to very hot.
11. Rub both sides of the steak with avocado or olive oil and sprinkle with a touch of course ground
salt and pepper.
12. Place steak in your hot skillet and follow the formula for a 2 inch thick steak – 4x4x8.
a. 4 minutes in a cast iron skillet on the stove – first side
b. 4 minutes in a cast iron skillet on the stove – second side
c. 8 minutes in a cast iron skillet in your 350 degree oven
13. Prior to placing the steak in the oven, top the steak with a bit of butter, garlic salt and parsley.
14. As the steak cooks in the oven, sauté the steak with the melted garlic butter
15. Remove from oven after 8 minutes
16. Let the steak rest for 5-10 minutes
17. Enjoy!
